Spago by Wolfgang Puck is another fine dining restaurant that has recently opened in Marina Bay Sands’ SkyPark.  This is an offshoot of Spago in Los Angeles Wolfgang Puck also has another restaurant called “Cut” serving mainly steaks at Marina Bay Sands.

On the right hand side is the lounge terrace serving drinks and a lighter menu. As the restaurant is perched on the 57th floor, the view here is exhilarating. Spago is on the left hand side and you need to open a massive blue door to get to the restaurant. There are white French windows on both sides of the restaurant and diners can enjoy breathtaking views of the bay and the city. The décor is simple and nothing elaborate.

Menu for lunch is only one page divided into sections for easy reference. At a glance, some of the dishes have local influence.  One good example is the chicken ‘laksa’ spring roll with kalamansi, chilli padi and laksa leaf ($18).  The laksa spices were very mild. In fact, I could hardly detect them.

Maryland blue crab cake is a good appetiser to start the meal. The fresh crab meat was well mixed with basil pesto aioli, heirloom tomato compote and society garlic blossoms, giving it a light taste. For two pieces of the crab cake which cost $38, the price is rather steep.

The salad with grilled chicken breast mixed with tandoori spices, sweet onions, wild rocket, lime pickle and cucumber-mint riata ($27) was given an Asian flavour with the spices. The dish was well executed with the salad a little sweet and sour which would go well with any Asian palate.

Spago also serves sandwiches and burgers for lunch. Since lobster rolls are now a craze, I could not resist ordering one to try. The maine lobster roll ($39) was served with old Bay aioli, celery hearts and toasted butter bun. It also came with a bowl of French fries. The lobster was fresh and the chunky meat was well mixed with the Bay aioli – providing the right complement for the slightly crispy toasted bun.

In the lunch menu, there is only one steak dish which is the grilled USDA prime sirloin ‘steak frites’ ($52). It is served with sauce béarnaise and hand cut French fries. The steak tasted ordinary and chewy although I requested for it to be done medium-well. I certainly have tasted better steaks at a much lower price.

The desserts served at Spago are good and should not be given a miss. The restaurant manager strongly recommended the Kaiserschmarren ($36 for two). This is a traditional Austrian dessert and takes about 15-20 minutes to prepare.  This dessert is like a soft sponge cake served with warm strawberries and strawberry ice cream. Although served separately, it should be eaten together for a delightful taste. This is an unusual dessert not found in any restaurant in Singapore.

The other dessert, Mille-Feuille ($24) was also equally good. It came with Thai mango, Tahitian vanilla cream legere in between layers of housemade puff pastry and served on the side was the mango sorbet. It was light and not too sweet with the roasted almonds providing an additional texture.

As expected from a fine dining restaurant, the service is impeccable and the serving staff are friendly and helpful. This is one restaurant where you can impress your business clients, but bear in mind that the prices are on the high side.
